PASTURED PORK

The pigs at Four Hands Farm are living the porcine dream.

We practice intensive rotational grazing with our pigs, leveraging their natural inclinations, abilities, and preferences to help us regenerate an old, burnt-out vineyard for future use as grazing land.

Why Pigs?

When we moved to our farm, we knew that we would need to bring in some serious livestock to help us reclaim and regenerate some seriously unmanaged, wild terrain. Pigs were the perfect crew for the job! They are a joy to raise, each having a unique (often delightfully quirky) personality. The pigs are always handled humanely (read: endless belly scratches) and moved to fresh pasture weekly, which ensures that they have a constant supply of fresh forage and carefully manages their impact on the landscape. If you come by and sit with them a while, you'll see them dutifully turning the soil with their snouts to uproot nutritious subterranean goodies. Roughly a quarter of their diet comes from the land, and they are supplemented with a top-quality, organic, non-GMO feed.

Every animal is unique, and they will never produce the exact same amount of each cut of meat.  However, a typical half hog will give us the following quantities of each cut:

  • 10-12 lbs bacon

  • 12-15 lbs of rib chops

  • 10-12 lbs sausage

  • 18-20 lbs ham

  • 15-18 lbs shoulder roast/shoulder steaks

  • 5-6 lbs spare ribs

  • 2-3 lbs of ham hocks

  • 3-5 lbs of soup bones

For a whole hog, simply double the above quantities. We will send you a cut menu from Coffaro's to give you an idea of which cut options are available, and you can have your hog cut to your exact specifications.
